I was eager to go back and ecstatic when I was invited to attend The Waterfront’s Blogger Dinner the following week!  The blogger event took place back in August, but I have been so incredibly busy I haven’t had a chance to share my experience until now.

But I’ve been back twice since the blogger event, too, and both experiences were equally as wonderful!

Coincidentally the executive chef, Matt Wall, is an old friend of mine from back in the day when we worked together at Citrus Restaurant.  He then opened North Quarter Tavern (another favorite restaurant) and is now continue to create awesome dishes, all made from scratch, at The Waterfront.

We started our wonderful evening with the “Florida Crush,” an orange vodka based cocktail, the House Pimento Dip and Hot Wings.

I especially loved the Pimento Dip, topped with salsa and jalapeños!

We sat down at communal tables and I met some wonderful influencers in the food and blogger community here in Orlando.

While we got to know each other, we enjoyed the refreshing “Jennie Jewel” cocktail, aptly named since The Waterfront’s back patio opens up to Lake Jennie Jewel paired with two more starters – Crab Cake Sliders and Tuna Poke Salad.

The Waterfront team was absolutely great in providing alternatives and modified dishes that were gluten-free.  I could not enjoy the Crab Cake Sliders, but they looked wonderful.  Instead they brought me a small plate of my favorite salad, the Avocado BLT. ?

The Tuna Poke Salad is gluten-free and is delicious!

The “first” main course was a duo of the Waterfront Burger and the French Dip sandwich, paired with the “Dixie Bell,” made with Jim Beam, mint, cucumber and lime.  Incredibly refreshing and a great mix of flavors.

The burger (minus the bun) was outstanding.  I can’t wait to go back and order it again.  I also sampled the French Dip (sans bun) which was good, but probably better when you can get the full experience as a “dippable” sandwich.

The “second” main course was a trio of Pan Roasted Catfish, Steak Frites and a Fried Chicken Thigh.  I couldn’t eat the chicken thigh, but the catfish was surprisingly tasty.  I had no idea I liked catfish!

And the Steak Frites, while a sample portion, was incredibly decadent, coated in fresh blue cheese and served with crispy french fries.  Definitely something I would order again.

Dessert was sadly not gluten-free, but looked incredible.  Chocolate Peanut Butter Pie and Bread Pudding.

Even though I couldn’t eat the two featured desserts, the team brought me a delicious bowl of vanilla ice cream topped with house-made apple butter!  YUM!  We enjoyed our final course with a taste of the “Margaret” cocktail, also bourbon based but definitely a dessert-tasting drink, with butterscotch and cocoa flavors.

Overall, the meal, drinks, service, ambiance and company were perfect.  The Waterfront is in such a great location, with beautiful views of the lake and fantastic lakeside patio seating.  They even throw adult swim parties on the weekends and a killer brunch. ?

This has quickly become one of our new favorite digs!

The best way to describe how insanely mouthwateringly amazing this Korean Bulgogi Bowl is, would be to use my new favorite emoji, the drooling face: ? Yes, it’s truly that good.I’ve mentioned previously that I absolutely love Half Baked Harvest’s blog and this recipe is another home run!

My bowl is so stuffed that you can’t even see all of the delicious ingredients:

  • brown rice
  • shredded cabbage
  • mango
  • avocado
  • fresh basil
  • fresh cilantro
  • fried egg
  • bulgogi (thinly sliced, marinated beef)
  • kimchi
  • fresh limes
  • sesame seeds
  • spicy peanut sauce

The beef is the star of this dish.  Thinly sliced skirt steak that has marinated in a delicious mixture of soy sauce, brown sugar, Gochujang, ginger, garlic and sesame oil over night is cooked over high heat in a large skillet until it’s cooked and caramelized, then sprinkled with sesame seeds.  Epic flavors.

Once you’ve layered all of your mix-ins you top everything with a decadent spicy peanut sauce which would be wonderful on its own.  I will definitely be exploring new possibilities with this sauce – perhaps incorporating into a chicken stir fry with rice noodles!

The other flavor star of these bowls is the kimchi.  Have you had kimchi before?  Kimchi is made from fermented cabbage and radishes.  Trader Joe’s sells an AWESOME jar of this in the refrigerated section.

We ate nearly the entire jar in one night.  It’s salty, a little spicy, garlic-y and oh so wonderful.  If you haven’t tried it before I suggest you give it a shot.

This dish is easy from a skill level, but there are a lot of steps.  Don’t let that scare you!  The flavors and satisfaction you’ll get from the finished meal are so worth it.  Plus, most of the elements can be prepped in advance to make for even easier assembly.

Your tastebuds will thank you for the explosion of flavors! ?

A brownie a day keeps the doctor away – isn’t that how the saying goes? ?

These are the fudgiest, richest, most blow-your-mind-awesome brownies ever.

Yes, ever.

And while I know they are mighty delicious hot and warm from the oven, I urge you to resist the temptation – let them cool completely and store in the fridge until chilled.  Then slice into decadent, fudgy squares and let all of your troubles melt away.

Since you need to under-bake these to really achieve the best flavor and consistency, letting them cool in the fridge helps keep their shape and turns the moist inner layer into perfectly dense and rich chocolate fudge.

The hazelnut flavor isn’t incredibly powerful once they’ve been baked, but there is still a nice nutty taste in the background.  If you’re looking for a punch of hazelnut, you could always slather some fresh Nutella on your brownie, I’m just saying…

These Nutella Fudge Brownies are nothing short of perfection.  And that’s all I have to say about that.

These Fish Taco Bowls have quickly become one of our favorite weeknight dinners!  I’ve easily made this recipe six times in the past month (proof here and here) – they are so easy to whip up and you can create your own version with different types of fish, salsas, guacamole and toppings.

We love to build the bowls over shredded cabbage for extra crunch, but you could create a base of rice, lettuce or quinoa, too!

My favorite fish to use is either cod or salmon.  The cod is a bit lighter and flakier and the salmon is more hearty – you truly can’t go wrong.  This blackening spice would be excellent with any fish, or even shrimp or tofu!  I like to make a big batch of the blackening spice mix and keep it in an old spice jar so I have it on hand in a pinch, but it only takes a few minutes to mix everything up.

The toppings really bring the flavors to another level.  This Chipotle Citrus Crema is bursting with bright orange and lime juice with the perfect spicy kick.  I like to use greek yogurt as the base because it’s healthier and provides a little protein punch, but mayonnaise would be another great base option (we’ve tried that as well!)And the mango avocado guacamole is to die for.  I actually make this often to snack on – a lovely mix of sweet, creamy and spicy!

I’m usually weird about leftover fish, but this makes killer leftovers so I always make enough to cover the two of us for dinner and lunch the next day.I promise this will be a new staple in your house, too.  Let me know what combinations you come up with!  (Pairs fabulously with a fresh margarita, I’m just saying…)

I love Chipotle Barbacoa Bowls something fierce. However since Chipotle made it “big” in the news last year, I haven’t visited very often. My lack of visits have only made me crave that delicious barbacoa beef even more.

When I stumbled across this recipe to recreate Chipotle’s barbacoa in a Crockpot, I knew I had to try it!  Plus, I love making my own guac and building my burrito bowls at home, so this was the perfect opportunity to combine the tasty flavors of Chipotle with my own condiments.

The flavors are spot on, with a little extra kick.  (Which we love.)  Plus, this is wicked easy to make since the prep time takes only 10 minutes to cut the beef and puree the sauce and your slow-cooker does all the work.  You’ll come home to a house full of yummy aromas and an awesome dinner waiting for you.

It’s hard to make shredded beef look pretty, so don’t judge this recipe by the below picture, but I wanted to show what just the beef looked like.  You can just SEE the flavor – can’t you!?Since we’ve been keeping mostly paleo during the week, we dressed up our Barbacoa with fresh romaine, sautéed peppers and onions, guacamole, salsa, jalapeños and hot sauce.  Next time I’ll probably build a burrito bowl with some nutty brown rice and maybe some freshly shredded cheese.

Some suggestions as you build your bowl:

  • brown or white rice
  • black beans
  • sautéed peppers and onions
  • guacamole (click here for my recipe, or here for Chipotle’s exact recipe)
  • corn salsa
  • hot tomato salsa
  • hot sauce
  • fresh or pickled jalapeños
  • sour cream
  • cheese (any shredded cheese or cotija cheese would be great!)
  • romaine lettuce
  • pico de gallo
  • crushed tortilla chips

One of my favorite things about paleo desserts is that they are the perfect balance of sweet and savory.  Don’t get me wrong, I love almost all things sweet, but sometimes I’m not in the mood for an incredibly sugary cupcake.  (Shocking, I know!)  That’s why paleo desserts, especially these dark chocolate avocado truffles, are the perfect treat to curb my cravings.

These paleo truffles come together quickly, except you need to soak the dates for three hours beforehand.  This ensures that the texture will be luscious and creamy.  There is no added sugar (a huge plus!) and they’re packed full of healthy fats from the avocado.

Rolled in an extra dusting of cocoa powder, they’re a lovely combination of slightly sweet and bitter.  A very adult treat in my opinion.  They’re really decadent and you can feel good about eating them, which is always a bonus.  Paleo, gluten-free, wheat-free and dairy free.  Give these truffles a try – I bet they won’t last long.

There are a lot of things I love about this recipe.  First, it’s delicious.  It’s also healthy, naturally gluten-free and paleo-optional.  But my favorite part about making this recipe is how easy it is!  The prep work takes about 10 minutes, you only dirty one pan (and your cutting board, but only one pan!) and the oven does all the work for you, deliciously roasting the veggies and sausage.

Plus, it’s super colorful.  Check out that rainbow of flavors!

For the sausage, you can pick whatever style you prefer.  I’ve made this with a few varieties but I really love aidell’s brand Italian-Style Gluten-Free Sausage.  You could absolutely make this with chicken breast as well, but I’d suggest giving the chicken a little sear in a pan first to give it a nice texture.

You can also mix and match with your favorite veggies or what you have on hand.  Mushrooms are great in here and summer squash would also be tasty.

Don’t let the list of spices scare you!  They provide an incredible combination of flavors.  I promise you will love how easy this dish is to make, and I bet it will be a new weeknight favorite in your house!

Pure awesome sauce.  This dish is FANTASTIC.

Get ready to rock your taste buds and make your house smell fabulous.

I’ve made this recipe almost once a week for the past month.  (Yes, it’s that great!)  I love prepping everything Monday morning and coming home after work to a house that is perfumed with scents of delicious, comforting food.  It makes dinner SO easy to prepare and is more enjoyable when all the prep work is completed earlier in the day.

We really love Indian food, and often the recipes can be a bit intimidating.  Don’t let the long list of spices freak you out!  I bet you already have all of these spices in your cabinet, except for the garam masala.  I actually found garam masala at my local grocery, but you could absolutely order this on Amazon if you can’t find it.

I promise this will be a new favorite.  And it’s healthy to boot!  Really rich in flavors, and packed full of spices that will warm you up and leave you deliciously satisfied.  Leftovers keep really well, too.

Say hello to one of my new favorite recipes!

This jerk chicken topped with mango avocado salsa is mighty delicious, wicked easy to whip up and can be on your table in under an hour.  Of course, if you have more time, letting the chicken marinate longer in this fabulous sauce will develop even more flavor, but it’s still fantastic with a quick 30 minute soak in the fridge.

It’s also beautiful.  Check out those colors!

The spicy marinade is full of rich spices and the perfect balance of heat.  And the mango avocado salsa is so divine that I would have been happy as a clam to eat it with a spoon as my main course!  The combination of flavor and heat from the chicken with the sweet and spicy salsa is perfect.

It’s completely paleo and gluten-free, which is a plus!  To keep things paleo, you can serve this over cauliflower rice, or if you’re not following a paleo diet, this is excellent over brown rice, quinoa or on its own.  It makes for really yummy leftovers, too.

You are going to love this dish, I promise!
