No-Bake Monster Cookie Balls
I love having healthy treats around the house to snack on when I get a craving for something sweet. Don’t get me wrong, I have a hard time saying no to cupcakes, fro-yo or really anything sweet… but if I have some healthier options around the house I’m more to reach for one of those instead of begging someone to come with me to Yogurtland.
These no-bake monster cookie balls are both a high-protein snack which will keep you full from the oats and peanut butter, plus they have just the right bit of sweetness to satisfy your sweet tooth.
I love to pack these and a bag of raw almonds with me for trips, in case I get hungry mid-day. They’re much healthier than snacks you’re likely to find at the airport!
You could throw in some chia seeds or swap the M&Ms and mini chocolate chips for chopped nuts and dried fruit. The base is so versatile you could truly mix in whatever you have on hand.
Next I plan on trying a version with almond butter, lemon zest and dried blueberries. I made a similar no-bake energy ball recipe a few years ago which had coconut flakes and flaxseed. Another tasty choice.
Whatever you decide to mix in, these high-protein granola balls are easy to make and are sure to be a winner.
