GF Review: Enjoy Life Foods Baking Mixes

Last year I attended Gluten Free Living’s gluten-free conference.  They reserved a special day of the conference for food bloggers, where we sat through workshops, listened to really cool guest speakers (like Jilly Lagasse!) and had the opportunity to meet hundreds of gluten-free product vendors on the show floor.  I met Enjoy Life Foods at the conference and stayed in touch with them over the past year.

Complete with all five new Enjoy Life Foods baking mixes: Muffin, Brownie, Pancake + Waffle, All-Purpose Flour and Pizza Crust.  Plus they included a cute oven mitt, spatula, wooden spoon and pizza cutter!  Such a fun surprise to come home to.

The mixes are gluten-free, and also free of milk, nuts and soy.  Very allergen-friendly.  I’m excited to try all of the mixes, but started with the brownie and muffin mixes.

First, the brownies!GF Review: Enjoy Life Foods | Hugs ‘n KitchenGF Review: Enjoy Life Foods | Hugs ‘n KitchenThe brownies were very fudgy and dense.  I loved them, because I love a rich, fudgy brownie!  And I think that is pretty consistent for gluten-free brownies.  The mix includes mini chocolate chips so you get added chocolate with each bite.

They were really fantastic straight out of the oven nice and warm.  After cooling completely, and spending some time in the fridge, they’re even richer than when they first came out of the oven.  Perfect with a big glass of almond milk.

I bet these would be excellent heated up quickly in microwave with a big scoop of vanilla ice cream.

Next, the muffins!GF Review: Enjoy Life Foods | Hugs ‘n KitchenGF Review: Enjoy Life Foods | Hugs ‘n KitchenThe muffin mix in the box is “plain” but the beauty is you can add whatever mix-ins you want!  Nuts, dried fruits, fresh fruits (blueberries!) or chocolate.  I opted for chocolate.  Unfortunately I used large chips and forgot to dust them in flour first, so they sank to the bottom of the muffins.  But they were still quite yummy.

GF Review: Enjoy Life Foods | Hugs ‘n KitchenAgain, these were really tasty when they were still a little warm.  They were light and fluffy and went great with my morning cup of coffee.  After they cooled down to room temperature they were a bit more dense, but still really good.  I’m storing mine in an airtight container in the fridge to make them last longer.  I wonder how these would fare with a quick re-heat in the microwave!

GF Review: Enjoy Life Foods | Hugs ‘n KitchenAdam preferred the muffins over the brownies, but I was a fan of both.
