Greek Yogurt Chicken Salad with Almonds + Apricots
I love chicken salad. It’s so versatile and you can create so many flavor combinations depending on what ingredients you mix in and what seasonings you add to your dressing.
A few years ago I discovered this recipe from Whole Living that uses Greek yogurt instead of mayonnaise, so it makes for a much healthier chicken salad.
The flavors are rich and wonderful. I’ve tried this with both fat-free and the 2% Greek yogurt. You have to use the 2% yogurt. The fat-free yogurt just doesn’t have the same flavor and I really didn’t like the way it made the chicken salad taste. Trust me on this one.
This chicken salad has a slight onion flavor from the chives, which mixes deliciously with the toasted, nutty almonds and sweet, sliced apricots. It’s pretty quick to throw together for a weekend lunch. And it has a beautiful presentation.
I love to have a scoop of this on some romaine lettuce, and it’s also great sandwiched between two toasted pieces of bread. You can serve this room temperature or refrigerate for chilled chicken salad.

Greek Yogurt Chicken Salad with Almonds + Apricots
- Total Time: 1 hour
- YIELDS 4 servings

Instructions
- Fill a large saucepan with water and bring to a boil.
- Once water starts boiling, add the chicken breasts, reduce the heat and simmer until the chicken is cooked through, about 10 minutes. (Check temperature with a meat thermometer.)
- Remove chicken and set aside to cool. Once cool, cut into bite-sized pieces.
- Meanwhile, prepare the dressing. In a small bowl, combine the yogurt, mustard, chives, apricots and almonds.
- Add the chicken to a large bowl, and stir in half of the dressing until combined.
- Continue adding small amounts of dressing, mixing to combine, until desired consistency is reached. (Discard extra dressing.)
- Season with salt and pepper to taste.
- Serve room temperature or place in the refrigerator for 30 minutes (or overnight!) and serve chilled.
- Garnish with fresh chives, apricots and almonds for presentation.
