Grilled Lime Shrimp Skewers

These lime shrimp are citrusy and delightful.

They are delicious on their own, atop quinoa or a fresh salad.  I love making a massive salad with romaine, kale, fresh corn, black beans, tomatoes, bell pepper, red onion and avocado, studded with these mouthwatering shrimp.  Then I make a spicy vinaigrette to drizzle on top.

Grilled Lime Shrimp | Hugs ‘n KitchenYou probably have all of the ingredients for the marinade in your fridge, and I always keep a bag of shrimp in the freezer.  Plus, the flavors from the marinade develop quickly, so this is a great dish for quick, last minute dinners.  I like to serve these with some brown rice and veggies, like roasted broccoli or grilled asparagus.

If you don’t have a grill or if you don’t feel like grilling, you could use this same marinade and easily sautée or roast the shrimp, too.

Grilled Lime Shrimp Skewers

  • Total Time: 30 minutes
  • YIELDS 4 servings


  • 1 lb shrimp, peeled + deveined (tails on or off)
  • 1 Tablespoon minced garlic
  • 1-2 Tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 lime, zested
  • 1/2 lime, juiced (save the extra half for garnish)
  • to taste salt + pepper


  1. Pre-heat your grill to medium heat.
  2. In a medium bowl, combine all marinade ingredients.
  3. Add the shrimp and mix so each piece is evenly covered.
  4. Skewer the shrimp onto metal skewers.  (If you are using wooden skewers, make sure you soak them in water for 30 minutes beforehand so they don’t burn on the grill.)
  5. Let the shrimp marinate for 20 minutes.
  6. Grill over medium heat until the shrimp is just cooked.  (Sometimes I like to do mine for an extra minute when I’m preparing for salads, because I like a bit firmer shrimp on my salads.)
  7. Squeeze the remaining lime wedges on top.
  8. Serve warm or atop your favorite salad.
