Lime + Tequila Grilled Chicken with Parsley
We love to eat chicken throughout the week. On salads, over quinoa or by itself with veggies. So I often buy a bunch of boneless, skinless chicken breasts and grill them up for the week. Sometimes I just grill them with salt, pepper and rosemary, seasoned salt and extra virgin olive oil. Or other simple combinations.
But sometimes I decide to throw a bunch of ingredients together in a bowl and see what happens! This combination turned out delicious, and it was so so easy to throw together.
If you have time, I suggest marinating your chicken breasts overnight, but if you don’t have time for that, even 30 minutes of marinating will do wonders.
I mixed a bunch of my favorite things together, and threw in a few random ingredients, too. The chicken caramelized on the edges and got a really delicious crust, but stayed perfectly juicy on the inside.
This chicken would be delicious in fajitas, on salad, by itself with a nice side of Cilantro Lime Rice or however you want to nosh on it!

Lime + Tequila Grilled Chicken with Parsley
- YIELDS 6 chicken breasts

Instructions
- Clean the chicken breasts and set aside. (It's also a good idea to pound the chicken breasts so they're all even in thickness.)
- In a large bowl, combine all of the marinade ingredients and mix together.
- Add the chicken breasts to the bowl and toss to make sure all pieces are coated evenly.
- Cover with plastic wrap and refrigerate overnight or for at least 30 minutes.
- Pre-heat your grill to medium-high.
- Grill the chicken breasts until cooked through, about 7 minutes per side, depending on the heat of your grill. The chicken is done when an instant read thermometer inserted into the middle of the breast hits 160°F.
- Remove from the grill and let the chicken rest for 5 minutes. Don't cut into the chicken immediately because all of the yummy juices will run out. While the meat is resting the temperature will continue to rise to 165°F.
- Serve with your favorite sides and enjoy!
