Cheesy Spinach & Artichoke Dip
I made this appetizer, from Paula Deen, for Thanksgiving. Another brand new recipe, but figured anything with two cups of cheese couldn’t be bad. And I love spinach and artichoke dip so I was excited to make it myself. Wow-ee, it was delicious!
A nice thick layer of cheesy spinach and artichoke hearts, covered with a melted, ooey-gooey layer of spicy pepper jack cheese. Such a lovely combination of flavors and textures.
We stayed in a lovely condo on the beach for Thanksgiving, and I was working out of that kitchen when I prepped this appetizer. I picked an 8″ x 8″ baking dish from the cabinet, however, I think that this would be better in a larger dish if you have one available to you. It was a pretty thick dip – I think a larger dish would allow the cheese to spread out more evenly over the filling, and the filling wouldn’t be quite as thick.
Don’t get me wrong – this was incredibly delicious and nobody had a problem with the size of the dish! But the next time I make it I’ll use a larger dish for sure.
I served this with gluten-free tortilla chips, and also a side of Triscuits for the gluten-eating folks. We had leftovers and I heated it up the following day in the microwave and tried a few bites with carrot sticks and celery dippers and that was great, too.
This was a huge hit and I will definitely be making this again soon!
What you’ll need: spinach, artichoke hearts, mayo, sour cream, Parmesan cheese and pepper jack cheese.
The recipe calls for chopping the artichoke hearts in a food processor, which I didn’t have access to at the time, so I chopped them up by hand and it worked just fine!
I bought pre-grated Parmesan cheese, but shredded the pepper jack by hand. It was so fresh and delicious!
Then you mix all the filling ingredients and layer them into your dish.
Top with the shredded Pepper Jack Cheese…
And bake until golden brown and bubbly on top!

Cheesy Spinach & Artichoke Dip
- Total Time: 45 minutes
- YIELDS 1 8x8" baking dish of dip

Instructions
- Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.
- Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry.
- Drain the artichoke hearts and coarsely chop in a food processor.
- Combine all the ingredients except the jack cheese in a large bowl. Stir well.
- Scrape into the prepared casserole dish and sprinkle the jack cheese on top.
- Bake for 30 minutes.
- Serve with chips.
