Roasted Cauliflower & Chickpeas with Mustard & Parsley
Cauliflower is such an under-appreciated veggie. It’s delicious when cooked and pureed, it tastes just like mashed potatoes but is way healthier. Try my Garlic & Parmesan Mashed Cauliflower for my favorite way to enjoy whipped cauliflower.
But today, we’re talking about roasting cauliflower, which is my favorite way to enjoy any vegetable! It adds such a delicious texture and layers of flavor, especially to cauliflower and broccoli.
This recipe is from the wonderful cookbook my dad bought me (that I’ve mentioned a few times already) by Gwyneth Paltrow: It’s All Good. (Thank you again, daddy!) This recipe combines roasted cauliflower and chickpeas with a perfectly tangy mustard vinaigrette and fresh parsley. Such a ridiculously awesome combination!
It was superb all hot out of the oven, and the heat warmed up the vinaigrette which tasted great and smelled wonderful. This was also yummy cold as leftovers for lunch the next day 🙂

Roasted Cauliflower & Chickpeas with Mustard & Parsley
Instructions
- Preheat the oven to 400 degrees F
- Toss the chickpeas and cauliflower together in a large roasting pan with 3 tablespoons of olive oil and a big pinch of salt.
- Roast, stirring now and then, until everything is dark and the cauliflower is quite soft, about 45 minutes.
- Meanwhile, whisk together the mustards, vinegar, and 1/4 cup of olive oil with a big pinch of salt and a few healthy grinds of black pepper.
- While the chickpeas and cauliflower are still warm, toss them with the mustard dressing and the parsley.
- Serve warm or at room temperature.
