Spinach & Feta Stuffed Chicken
Stuffed chicken breasts are usually pretty easy to cook, and make for a beautiful and impressive presentation if you’re having guests!
The only tricky part is learning how to cut a pocket into the chicken breasts without cutting all the way through, but once you have that mastered you are all set.
This recipe in particular is really delicious combination with the filling made of salty feta cheese, cream cheese and vitamin-rich spinach.
What you’ll need: feta, spinach, cream cheese, scallions, garlic, extra virgin olive oil, chicken breasts.
Start by preparing your filling. In a bowl, mix together the feta, spinach, cream cheese, scallions and garlic. I usually use my fingers or a fork to start mixing things together. It’s easier if your cream cheese is at room temperature.
Cut a pocket into the side of each chicken breast, without cutting all of the way through, and stuff each chicken breast with a quarter of the filling. Season the chicken with salt and pepper.
Heat the extra virgin olive oil in an oven-proof skillet over medium-high heat and cook the chicken until golden, about 4 minutes per side. Transfer to a 450 degrees preheated oven and bake for an additional 5-7 minutes or until cooked through.
Serve with sides of your choice and enjoy! I served mine with my baked sweet potatoes and a simple Caesar salad.

Ingredients
- 3/4 cup crumbled feta
- 1/2 cup thawed frozen chopped spinach, squeezed dry
- 3 Tablespoons cream cheese
- 1/4 cup chopped scallions
- 2 cloves garlic, minced
- 3 Tablespoons EVOO
- 4 6oz boneless, skinless chicken breasts
- salt and pepper
Steps
- Preheat oven to 450 degrees.
- In a medium bowl, mix first 5 ingredients together.
- Cut a lengthwise pocket into each breast; stuff with spinach mixture and season the chicken with salt and pepper
- In an oven-proof skillet, heat EVOO over medium-high and cook chicken until golden, 4 minutes per side.
- Transfer to oven and bake 5 to 7 minutes or until cooked through.
