Garlic Parmesan Mashed Cauliflower

IMG_6761Mashed cauliflower is a delicious and healthy substitute for mashed potatoes.  I learned this a few years back when my family tried the South Beach Diet, and mashed cauliflower was one of our key dinner staples!

I still love it, and love learning new ways to prepare cauliflower.  (One of my favorites is to cut cauliflower into small pieces and roast it at a high temperature.  It kind of tastes like tater tots if you get it right and is yummy with some ketchup.)

This recipe has a few steps to it, but it’s fairly easy to make as long as you have a food processor, hand mixer or table mixer.  It’s also really flavorful, and incredibly healthy other than the cheese, which you could lessen or omit if you’d like and it will be just as tasty.

What you’ll need: cauliflower, milk, butter, Parmesan cheese, garlic salt, chives, salt and pepper.

Start by cutting a large head of cauliflower into medium-sized florets.  Add them to a saucepan with a teaspoon of garlic salt, cover with water, bring to a boil and cook for 8 minutes until tender.

Drain the cauliflower, and in a food processor combine with the milk, butter, Parmesan, 1/2 teaspoon garlic salt, fresh chives, salt and pepper and blend until smooth and creamy.

It’s best served immediately and hot, but you can always reheat in your microwave prior to serving.

Garlic Parmesan Mashed Cauliflower

Ingredients

  • 1 big head of cauliflower, cut into medium-sized florets
  • 1/2 cup milk (I used almond milk)
  • 1-2 Tablespoons butter
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon + 1/2 teaspoon garlic salt, divided
  • 3 Tablespoons fresh chives
  • 1/2 teaspoon pepper
  • salt to taste

Steps

  1. Cut the head of cauliflower into medium-sized florets.  Add them to a saucepan with the teaspoon of garlic salt, cover with water, bring to a boil and cook for 8 minutes until tender.
  2. Drain the cauliflower.
  3. In a food processor (or you can use an electric mixer) combine the drained cauliflower, milk, butter, Parmesan cheese, 1/2 teaspoon garlic salt, chives, pepper and salt to taste and blend until smooth and creamy.
  4. Taste for seasoning, transfer to your serving platter and enjoy while hot.
  5. If you don’t serve immediately, you can reheat in your microwave prior to serving.
