BLT Chopped Salad with Lime Dressing

IMG_6384This salad was the bomb!  So packed full of flavors and great textures.  I ate my entire massive salad, and my boyfriend literally licked his bowl clean.

If you love BLT sandwiches, you will love this salad.  The original recipe called for regular bacon, but in an effort to make this slightly healthier, I used turkey bacon which was still pretty dang awesome.  The hardest part of this is waiting for the bacon to crisp up.  But you can cut up all of your other veggies while you wait, and it takes a few seconds to throw everything together.

The dressing is so simple, and perfectly brings out the flavors of this dish without overpowering them.  You could of course use regular bacon if that’s what you prefer!  I love the firmness and pop from the grape tomatoes, but you could use different variations of tomatoes as well.  You can’t go wrong here.

You HAVE to try this salad!  We will definitely be eating this again soon 🙂

What you’ll need: turkey bacon, romaine, arugula, grape tomatoes, turkey bacon, sweet corn, avocado, feta cheese, extra virgin olive oil, lime juice, salt and pepper.

First things first, get your bacon cooked and crispy.  Once it’s done, chop it up into pieces.

While the bacon is cooking, whisk together the dressing and set that aside.  And chop all of the ingredients for the salad.  Mix together with the dressing.

Add in the chopped bacon and feta and give it a light toss.  Serve and enjoy!

BLT Chopped Salad with Lime Dressing

Serves 2BLT Salad

Ingredients

  • 1 heart of romaine spear, chopped (about 2 cups)
  • 2 cups of arugula, chopped
  • 1 pint of grape tomatoes, halved
  • 8 slices turkey bacon, fried and chopped
  • 1 cup sweet corn
  • 1 avocado, chopped
  • 4 oz feta cheese, crumbled

For the dressing

  • 1 1/2 Tablespoons extra virgin olive oil
  • 1 lime, juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a small bowl, whisk together dressing ingredients and set aside.
  2. In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado.
  3. Add the dressing and toss well to coat.
  4. Fold in turkey bacon and feta.
  5. Divide evenly among two plates and enjoy!
