Grilled Cilantro Sesame Chicken

IMG_5448This chicken is so easy to prepare on a work night.  There aren’t too many ingredients involved and it only has to marinate for 15 minutes so you don’t have to plan ahead for this one.

It’s also surprisingly packed with flavor for the short marinating time.  I love it on it’s own, or on a nice salad.  I always make extra so we have leftovers for lunches and salads throughout the week!

What you’ll need: garlic, fresh cilantro, soy sauce, sesame oil, boneless skinless chicken breasts

Start by cleaning the chicken breasts and placing them in a bowl.  Combine the garlic cloves, cilantro, soy sauce and sesame oil in a food processor and process until smooth.  Pour the marinade over the chicken breasts and let flavors marinate for 15 minutes in the refrigerator.

Prepare your grill or broiler. Cook chicken until cooked through.

Let the chicken breasts rest for 5 minutes before serving to prevent the meat from drying up.  Serve with your favorite side dishes or on top of a salad and enjoy!

Grilled Cilantro Thai Chicken

Serves 4

Ingredients

  • 2 garlic cloves, chopped
  • heaping 1/2 cup cilantro, stems removed
  • 1.5 Tablespoons GF soy sauce
  • 2 Tablespoons toasted sesame oil
  • 4 chicken breasts (I used boneless, skinless, but you could use bone-in skin-on, or whatever cut you prefer)

Steps

  1. Clean the chicken breasts and place in a bowl.
  2. Combine the garlic cloves, cilantro, soy sauce and sesame oil in a food processor and process until smooth.
  3. Pour marinade over the chicken breasts and make sure that all of the pieces are coated.  Let the flavors marinate for 15 minutes in the refrigerator.
  4. Prepare your grill or broiler. Cook chicken until temperature registers 165F on the meat thermometer.
  5. Let the chicken breasts rest for 5 minutes before serving to prevent the meat from drying up.
  6. Serve with your favorite side dishes or on top of a salad and enjoy!
