“Baked” Sweet Potatoes with Toasted Marshmallows

IMG_5223I don’t know how to describe how insanely awesome these sweet potatoes are.  They are soft, sweet and perfectly gooey from the toasted marshmallows.  The marshmallows themselves inspire dreams of campfires and s’mores, but that’s a post for another day…

The flavor of an oven-baked potato is really great, but sometimes I’m just not that patient and I don’t feel like taking the time to slowly bake a sweet potato from scratch in the oven.  In these moments, my microwave comes in super handy because it can speed up the potato cooking process.

If you don’t have a microwave, or if you have a lot of time on your hands and prefer to cook the potatoes completely in the oven, you can do that, too.  You would just need to pull them out of the oven once they’re cooked, slice in half, fill with the goodies and pop them back in the oven under the broiler until the marshmallows are toasted.

Here’s step-by-step instructions and an easy-to-print recipe is below.

What you’ll need: sweet potatoes, light brown sugar, cinnamon, salt and marshmallows

Preheat your broiler on high, and line a baking sheet with tinfoil.  Rinse the sweet potatoes with water, and pat dry with a paper towel.

Take wax paper and wrap the sweet potatoes up like pieces of candy, by twirling the ends of the wax paper to seal in the heat.  Cook the potatoes in the microwave for about 8 minutes, or until cooked through.  Depending on the size of your potatoes and the power of your microwave, your cooking time might vary a bit.  My microwave has a handy potato button, too, which helps with the cooking time here.  They should feel soft to the touch when they’re done, but be careful because they will be very hot!  If you cut them open and they’re not all the way cooked, don’t worry.  Just put them back in the microwave for a bit longer.

Once they’re cooked, carefully remove the wax paper and set them inside the tinfoil-lined baking sheet.  They will be super hot!

Slice the potatoes down the middle so you create a pocket for the goodies.  Try not to cut the potato all the way through, but if you do, it’s not the end of the world.

Sprinkle with the salt (to taste), cinnamon (about 1.5 teaspoons per potato), and brown sugar (about 1-2 Tablespoons per potato).  Then place 4-5 big marshmallows down the middle of each potato, or more if you can fit them in!

Cook under the broiler until the marshmallows are toasted to your liking, about 3-4 minutes.  Enjoy your yummy masterpiece!
