Cilantro Lime Rice

IMG_5183This rice is so delicious and could not be easier to make!  It’s great as a side dish, as the base of a yummy burrito bowl, or on its own.  I made this rice with my Skirt Steak and Roasted Jalapeño Chimichurri and they were sensational together.

My favorite type of white rice is Mahatma Jasmine Rice.  You can use whatever type of rice you have on hand, and brown rice would be great in this, too.

What you’ll need: rice, lime juice, lime zest, butter, cilantro, salt and pepper.

Add the water and rice to a medium sauce pan and bring the water to a boil.  Once it’s boiling, give it a good stir, add the butter, cover the pot and reduce heat to a simmer for 20 minutes, until the rice is cooked and has absorbed the water.

While the rice is cooking, zest the limes, squeeze the juice and chop the cilantro so you have your ingredients ready to go.

Once the rice is cooked, fluff with a fork.  Add the lime juice, zest and cilantro and stir everything until combined.

Taste and season with salt and pepper.

Transfer to a serving bowl and top with extra lime wedges.

Cilantro Lime Rice

Ingredients

  • 2 cups rice
  • 4 cups water
  • 2 Tablespoons butter
  • Zest from 2 limes
  • Lime juice from 2 limes
  • 3/4 cup chopped cilantro
  • Salt and pepper

Steps

  1. Add the water and rice to a medium sauce pan and bring the water to a boil.  
  2. Once it’s boiling, give it a good stir, add the butter, cover the pot and reduce heat to a simmer for 20 minutes, until the rice is cooked and has absorbed the water.  Fluff rice with a fork.
  3. Stir in the lime zest, lime juice, cilantro, salt and pepper into the pot.
  4. Season with salt and pepper to taste.
